
There's just something special about the first harvest of summer. Don't these squash and zucchini look great? By the end of summer we'll be tired of eating them so much, but this first harvest of the summer is very exciting. Our grocery bill will start going down now.
Last year I froze some squash to use throughout the winter. Then we bought a new energy star certified refrigerator (the old one was leaking). When the delivery guys took my old refrigerator away, I didn't realize that I had forgotten to clean out the freezer part of it. There went all my frozen squash and everything else! I called shortly after they left, but they refused to bring it back or even let me meet them somewhere and pick it up.

Anyway, we had part of our first harvest for dinner. This wasn't what I had planned for dinner tonight, but seeing those veggies made my husband and I throw a meal together that included them. He cut up the squash and fried it with egg and cornmeal (we live in the south, you know) and he cut the zucchini into coins and grilled it with butter (real butter - not the fake trans fat margarine stuff).
I had a box of organic spinach and whole wheat pasta that I threw together with some cream soup and some leftover chicken, and we added a can of carrots for color (all that green kind of blends in, doesn't it). Not the most colorful meal we've ever had, but not bad for a meal we threw together at the last minute.

Looking at all of that beautiful squash makes me hungry. Yellow summer squash is my favorite. Even though I don't grow any I have just this week had a big sack given to me and none went to waste. Hope all of your veggies turn out this good. Great fresh dinner..and Southern style..My kind of livin'.
